Cabbage & Beef Runzas

This recipe is from the Taste of Home Cooking School.  I went to this about a year ago, but I was just flipping through the cookbook again today to figure out what to make for dinner and found this recipe!

Here’s what you’ll need:
4 cups sliced cabbage
1 cup sliced yellow onion
1 Tbsp vegetable oil
8 ounces ground beef
1 tsp sugar
1 Tbsp vinegar
1 tsp salt
1 tsp pepper
12 Rhodes Texas Rolls or 24 Rhodes Dinner Rolls, thawed to room temp
1 cup (4 oz) shredded mozzarella cheese
2 Tbsp butter, melted

In a large skillet, cook cabbage and onion in oil for 5 minutes, stirring occasionally.  Cover and steam over low heat for 40 minutes.  Brown ground beef in a large skillet; drain.  Add cabbage and onion mixture, sugar, vinegar, salt and pepper; cook for an additional 20 minutes.

Flatten each Texas roll, or 2 combined Dinner Rolls into a 6 in circle.  Divide filling among 12 circles (about 1/3 cup).  Place 1 heaping Tbsp mozzerella cheese on top of filling.  Pull edges around filling and pinch to close.

Place on a large greased baking sheet, pinched side down.  Brush tops with melted butter.  Bake 350 degrees F for 30-35 minutes or until golden brown.

This recipe yields 1 dozen.
