Cheesy Cauliflower Bake

Growing up, this was always a hit at our house.  Even my siblings who HATED cauliflower would scarf this down.  It’s so cheesy and rich that it’s the perfect comfort food in the winter months.  This is a traditional Christmas dish at our house every year, and it’s quickly becoming a favorite with my children as well.

Here’s what you’ll need:

1 head of cauliflower washed and broken into big bunches.
1 can of cream of mushroom soup
12 oz of Cheese Whiz or Velveeta Cheese
1 1/2 cups of Pepperidge Farm Herb Seasoned bread crumbs.

  • Steam cauliflower for 8 minutes or until cooked.
  • Drain thoroughly.
  • Place cheese and soup in a microwave safe bowl and microwave on high for about 3 minutes or until well mixed.  Stir every 30-45 seconds.
  • Place cauliflower in a 2 or 3 quart baking casserole.  Spread cheese mixture over cauliflower.  Sprinkle bread crumbs over all.
  • Bake uncovered at 350 degrees F for 30-45 minutes.

Serves 6
