Chicken A La King

So, remember yesterday we had Oven Roasted Chicken? Well tonight’s dinner is being made from the leftover baked chicken. One time cooking = 2 great meals! I don’t have to go through all of the work of cooking the chicken. It’s a perfect time-saver! I got this recipe from one of my aunts years ago…

Here’s what you’ll need to make this delicious meal:
6 oz mushrooms (drained, but reserve the juice)
1/2 c green pepper, chopped
1/4 c butter or margarine
1/4 c flour
1 tsp salt
1/4 tsp pepper
1 c evaporated milk
1 c chicken broth
2 c chicken (cut into bite-sized pieces, and cooked)
4 oz chopped pimento, drained.
Toast or Pillsbury Grand Biscuits

Saute mushrooms and peppers in butter. Stir in flour, salt & pepper. Cook over low heat until bubbling. Remove from heat. Stir in evaporated milk, broth & mushroom juice. Heat, stirring frequently, until thickened. Add chicken and pimento. Heat throughly. Serve over toast or grand biscuits. This recipe will serve 4. Bon apetite!
