Roast Beef Roll-Ups

Since tonight is election night, I want to make something that will be quick and easy.  Something that my family will be able to eat in the living room while watching the coverage of the polls.  Roast Beef Roll-Ups it is! I can’t take credit for this great recipe; it’s from Taste of Home’s Simple & Delicious Recipes.

Here’s what you’ll need:
1 (16 oz) pkg of coleslaw mix
3/4 cup coleslaw salad dressing
1/2 cup mayonnaise
1/4 cup dijon mustard
2 Tbsp cider vinegar
2 tsp sugar
1/2 tsp celery seed
1 pound thinly sliced deli roast beef
4 Italian herb flatbread wraps
1/2 pound swiss cheese, thinly sliced

In a small bowl, combine the first seven ingredients. Divide roast beef among flatbread wraps. Top with cheese and coleslaw mixture; roll up tightly.
This recipe will serve 4.

This recipe can also easily be transformed to make reubens! Just substitute corned beef, sauerkraut, caraway seeds, and thousand island dressing. Enjoy!
