Sunday Morning Egg Bake

This recipe is all my own. Over the years, I’ve tried many different egg bakes and didn’t really find one that I loved. So, I took the best stuff from all of them and in my opinion, it’s the best egg bake EVER :)

Here’s what you need:
1 lb hash browns
1 stick butter, melted
2 lbs sausage browned or ham cubed
12 eggs
1/2 c milk
2 c shredded cheddar cheese
4 oz sliced mushrooms (fresh ones are always better, but canned will work too)
1/2 medium onion, chopped
1/2 green pepper, chopped

Spread hash browns in bottom of 9×13 glass pan. Drizzle butter over hash browns. Bake at 350 degrees F for 20 minutes or until slightly browning. Layer meat on top of hash browns. Cool for 20 minutes.

Meanwhile, mix together eggs, milk, cheese, mushrooms, onion and pepper in a large bowl. When potatoes and meat are done cooling pour egg mixture over top.

I usually bake it right away, at 350 degrees F for 45 - 60 minutes. You can refrigerate it overnight and bake in the morning as well. If you do this, I would bake it at 350 degrees for 60-75 minutes.
