Wild Rice Cheese Soup

Yet another of my favorite soup recipes! I got this from one of my friends’ mothers; no idea what source it came from though. I think that she made it up? Regardless, after you make this, you’ll be in love with this soup! It’s a hearty, filling soup and will definitely warm you up on a cold winter day.
Here’s what you need:
1 c wild rice (black)
1 large onion
2 Tbsp butter
1/2 lb bacon, browned and crumbled
2 (10 3/4 oz) cans cream of potato soup
1 qt half and half
2/3 lb Velveeta cheese
- Saute onion in butter, in a large pot, over medium high heat until transparent.
- Add remaining ingredients to pot.
- Bring to a simmer over medium-low heat.
- Simmer until cheese melts.
Notes:
- This recipe also freezes well, so many times I double the recipe and freeze it in one-serving portions for another day!
- I don’t always use a whole quart of half and half. To save on calories, I use 2 cups of 2% milk and 2 cups of (fat free) half & half. Make it your own
